100% Sun Prairie Whole Wheat Flour

Whole Wheat Bread (Bread Machine)
3 cups stone-ground whole wheat flour;
1 ½ tsp. salt; 2 tbsp. sugar; 1 ½ to 2 tsp. bread machine yeast;
1 egg; 1 tbsp. oil; 1 tbsp. lemon juice.

Blend egg, oil, lemon juice and water to equal 1 ½ cups of liquid. Add according to directions of your bread machine. Bake on Whole Wheat cycle.

Short Cake (takes 10 minutes to prepare)
3/4 c. butter, softened; 3/4 to 1 c. sugar; 2 eggs;
3 c. Sun Prairie whole wheat flour; 2 ½ tsp. of baking powder;
1 ½ c. milk.

Beat butter, sugar and eggs. Add dry ingredients alternately with milk. Bake in greased 13'x9' baking pan at 350F for about 30 minutes. Tastes great with ice cream and fresh fruit topping!

Cheese Biscuits (take 10 minutes to prepare)
2 c. Sun Prairie whole wheat flour; 4 tsp. baking powder; 3/4 tsp. salt;
1 c. grated cheese; 1/3 c. oil; 3/4 c. milk.

Combine all ingredients. Form into paddies and bake on greased baking sheet for about 15 minutes at 375F.

Strawberry-Rhubarb Crisp
Filling:
2 cups organic Rhubarb (small pieces); 2 cups sliced organic strawberries (or frozen);
2/3 cup sugar or ½ cup honey; 2 Tbsp corn starch; 2 Tbsp cold water;
Crisp:
1 cup Sun Prairie whole wheat flour; ½ cup brown sugar; 1 cup organic rolled oats; ½ cup butter.

Hull and slice strawberries and combine with sugar/honey. Let stand for 20 minutes. Meanwhile, trim and cut rhubarb. Dissolve corn starch in 2 Tbsp of cold water and stir into berries. Add rhubarb and spoon mixture into 8"x8"x2" baking dish. Combine crisp ingredients well. Sprinkle over fruit mixture and bake in preheated oven at 375F for 35 minutes. Tastes great warm or cold with vanilla ice cream or whipped cream.

Apple Sauce Nut Loaf
2 cups Sun Prairie whole wheat flour
½ tsp. Baking powder
1 tsp. Baking soda
1 tsp. Cinnamon
½ tsp. Salt
1 cup brown sugar, packed
1 cup of walnuts
3/4 cup raisins
½ cup of oil
2 eggs, beaten
1 cup of applesauce
1 tbsp apple juice or water
½ tsp vanilla
Preheat oven to 350F. Grease a 9 1/4" x 5 1/4" loaf pan. Combine flour, baking powder, baking soda, cinnamon, salt and brown sugar. Add walnuts and raisins. Stir to mix. Combine remaining ingredients. Stir liquid ingredients into dry ingredients and mix well. Spread into prepared loaf pan. Bake for 1 hour or until centre is set.

Sun Prairie Sifted Wheat Flour

Sifted flour may be substituted in any of the above recipes. It yields a lighter texture but has richer flavour than white flour. A portion of the coarser bran has been removed. Below are favourite recipes for special occasions

Layered Lemon Cake

Cake
2 ½ cups Sun Prairie Sifted Wheat Flour; 3 tsps baking powder; ½ tsp salt
2/3 cup butter; 3/4 cup sugar; 1 ½ tsp vanilla; 2 eggs
1 ½ cups milk

Grease and lightly flour 13" x 9" x 2" pan. Combine dry ingredients. In a bowl, mix butter until soft. Add sugar and vanilla and beat until combined. Add eggs one at a time while beating mixture until combined. Add dry ingredients and milk alternately. Beat well until combined. Pour into pan. Bake at 375F for about 30-35 minutes until toothpick comes out clean. Cool for 5-10 minute before removing from pan. Fill when cool.

Lemon Filling
1 ½ cups sugar; 4 Tbsp corn starch; dash of salt
1 ½ cups cold water
2 egg yolks from organic free-range eggs, lightly beaten
6 Tbsp lemon juice from fresh organic lemons
2 tsp of grated lemon peel from organic lemons
2 Tbsp butter

In a sauce pan, mix sugar, cornstarch and salt. Add water, egg yolks and lemon juice. Cook over medium heat until thick, stirring constantly. Remove from heat and add lemon peel and butter. Cool to room temperature.

To Assemble
Cut cake once vertically and once horizontally to obtain 4 rectangular layers. Spread lemon filling over cake layers except top layer. Whip 250 ml of whipping cream with a dash of real vanilla and 1 Tbsp of icing sugar. Spread over top of cake. Sprinkle with toasted coconut.

Chocolate Zucchini Cake
Cake
1/4 c butter; ½ c of extra virgin olive oil; 1 c sugar; 2 eggs; 1 tsp vanilla
½ c buttermilk (or sour milk - 1 Tbsp of vinegar to 1 cup of milk)
2 ½ c Sun Prairie Whole Wheat sifted flour or pastry flour
4 Tbsp cocoa; ½ tsp baking powder; 1 tsp baking soda;
½ tsp cinnamon; ½ tsp cloves
2 c grated organic zucchini
½ c chocolate chips

Cream butter, oil, sugar, eggs, vanilla and buttermilk. Combine dry ingredients and add chocolate chips. Add zucchini to creamed mixture. Add dry ingredients to creamed mixture. Bake in greased and floured bundt pan or 9"x13" pan at 325F for 45 minutes or longer, until done.

Filling
1 c whipping cream; 1/4 c sugar; 3 Tbsp cocoa
Mix ingredients and place in fridge for 2 hours. Beat until cream is stiff.
To Assemble
Cut cake in layers and fill with cream inside and out.

Sun Prairie Whole Wheat Pastry Flour

Great for any cake or pastry. Substitute in your white flour cake and pastry recipes but increase liquid or reduce flour portion by about 2 Tablespoons per cup of white flour because whole wheat flour absorbs more moisture.
